I’ll take walleye and crappie . I have fish taco out of a lot different fish that were wonderful.

I am perplexed by peoples disdain for striper! I always bleed them, and get them immediately on ice; they are pretty darned good, and I am very particular when it comes to my fish and game....

I also do not find that the walleye and crappie are in very good condition in the spring. Crappies are always very soft, and the walleye can also be mushy. Healthy, well taken care of stripers make fantastic fish tacos!!!! If they are the slightest bit skinny, they get returned to the water (dead).

Not saying stripers don't taste good, especially some healthy two pounders, but bluegill breaded in cornmeal and fried up is pretty darn tasty.
