I love boiled Bluegill in a butter sauce with a little tabasco, I have heard people call it poor mans lobster. But I never thought it taste like lobster at all.
You would probably love it then. I’m sure it’s the best tasting fish in the Gorge, but it’s not quite as fast if fishing as it was 10 years ago. You’d hear of 200 fish nights. Now those same guys seem to really be having a lights out night catching 50 or so.

Now you have me curious they must be pretty good if they're better than kok.

Have you gotten into them yet? Wish I were there, I know fishing is going to get good here soon :)
Just got home, the bite turned on yesterday up in good hope. Big fat stripers full of shad. Everyone I cleaned had at least 4, 2” shad in their bellies. Not the haul of striper I’m accustomed to in the winter, but no wind and sunshine was nice. It was a good trip.

What depth did you find them in, and did you get them on the Chovys?
Thanks

Chovys, in 25 to 35 ft. There were huge shad balls everywhere. I think it was the moon, I’ve always had great success in the winter and it wasn’t that i couldn’t find the fish. They just weren’t interested in anything thing we threw. And we threw the book at em. Until yesterday we hardly caught any fish. I saw them all over up north, found so many schools, and when we spot locked on top nothing. Could not get them fired up. Super weird. The water temp was 36 up by the horn. Visibility 0. The sediment has really started filling up the lake up there. I’ll have to go back soon, the fish were so healthy and this trip didn’t scratch my itch for striper action.

Personally, I think they are better than striper, but not as good as walleye or perch (my favorite freshwater fish).
I think Burbot doesn’t hold up super good to freezing, but fresh or recently frozen is pretty darned good!
Their weird fish, you skin them and filet them like catfish…don’t gut em’
You can fillet them just like you can fillet catfish. The anatomy is a little different from other fish but once you get the hang of it fillet and skin is pretty easy and to me much faster and easier than skinning with pliers or skinner. I have filleted many of them. They are pretty tasty, I prefer walleye perch striper but Burbot are good to eat.
