This quick and it is an easy way to prepare a large amount of fish for a group of people.

Striper Panko

You will need:
1/2 cup of mayo
1/2 tsp of lemon pepper, salt, granulated garlic and old bay seasoning.
1 tsp of dried sweet basil.
2 cups of panko.

Combine all your ingredients (except for panko) to make mayo sauce. Take striper fillets rinse and pat dry, dip in mayo sauce to get a light coating. Then roll in panko. Place fish in a lightly greased baking sheet. You can fill your cooking sheets with fish just don't have the fillets touching. Bake at 375 deg. for 12-14 mins. The fish should be turned about half way through, although we have done them with good results not turning them. Either way you have a nice moist fish that has a light breading without all the grease of deep fried drama.
