I agree with the Redears. Caught a bunch at Lake Havasu this winter most were in the 2-1/2 to 3 lb range my buddy did catch a nice 4lb 6 oz one. They are strong fighters.I had a Bluegill on toasted bunn, home made tarter sauce, lettuce, and pickles yesterday, fresh from the day before. Its my new favorite fish sandwich.
I don't mind filleting them, but you probably fillet with an electric knife. And I use a 4" hand, on everything I fillet, its probably a thinner blade then electric.
These mussel fed gills are going to be fun to say the least.
