Learned this one last week. Not at all traditional, but tasty!

Two pounds of fish fillets, cut into 1/2" cubes. (We used smallies, but any white-fleshed fish will do)
One bottle of RealLemon juice
One bottle of RealLime juice
One bottle (see above) filled with orange juice
One bottle of Pace Picante Sauce
Chopped cilantro (optional, in case it tastes like soap to you)

Combine into gallon freezer bags and chill overnight while the juices cure the meat.

Enjoy both the fish cubes and the "Tiger Blood" juice mixture.
 
Wayne might be able to supply more information regarding this. There are questions about eating freshwater fish raw/ cured and if the lime/lemon juice would make it safe and destroy parasites and or pathogens that are harmful to humans. There is a lot of info online to check into and decide.
Freshwater-fish are known to host parasites that can be harmful to humans. With that being said a good doctor friend of mine made ceviche from Stripers at Powell on many trips over the years and nobody ever had ill effects. It was always very tasty, I love ceviche!!
