While fishing for Walleye I caught a 20 lb carp on a ned rig at Starvation. Thought I had the biggest walleye in the lake until I saw it. I was going to throw it in the dumpster but my wife said what a waist, and she had me fillet it. She cooked it up and I have to say it was not bad, really quite good. I have had fish that were from the freezer that were a lot worse. It had a lot of bones, but they were about the size of toothpicks and easy to pick out. Fresh carp out of cold clear water is really quite good, and I was really impressed with how it tasted. Don't knock it until you have tried it.

It is pretty funny how people get all excited about catching an 18" bass, when 40" carp are swimming past! They are harder to catch, get bigger and fight great. I am guilty of doing the same thing...Which is kind of weird when we are going to release the fish anyways. I think the fact that they are omnivorous, and are not nearly as aggressive in chasing down baits/flies is part of the issue?We have deep fried it and thought it was good as well.
