Breakfast sausage, canned white potatoes (the whole ones but slice in half before cooking), eggs, green and red peppers, onions, mushrooms (canned or fresh), and anything else that sounds good to you. Brown the ground sausage, onions and peppers, add the potatoes and brown them, add the mushrooms and saute with the other stuff briefly.Then pour in the beaten eggs and scramble the whole mess together. Season to taste. Serve with salsa. Goes great with a "breakfast beer".

Make sure you pour off excess grease after browning the sausage. You want just enough left in the skillet to help you give the potatoes a nice brown color. If you leave too much, they'll get soggy.
