We use a small box mix of Beer Batter. We add water, you can add what you like. This is a light tempura type batter.
Cut the striper filets into 1/2” wide strips. Dip them into the batter and place in oil on medium heat for about 1-2 min a side or until the batter starts to turn a golden yellow. Place on a plate with paper towels to cool and remove excess oil.
Add to tortillas with shredded cabbage or lettuce and add sauces and seasonings to taste.
