2 small acorn squash
½ cup melted butter divided
¼ cup brown sugar
2 cups Granny Smith peeled and chopped apples (any tart apples)
2 tsp minced orange peel
¼ cup of raisins
1/8 tsp ground nutmeg
¼ tsp of cinnamon
Preheat oven to 350 degrees. Cut each squash in half, remove seeds, and put cut side down on a baking sheet. Bake for 40 minutes.
Combine ¼ cup of the melted butter with the brown sugar and stir well. In another bowl put the other ingredients and mix with the remaining butter. After 40 min remove the squash from the oven and turn over with a spatula. Poke holes in the squash (not through the skin) and brush it with the butter/brown sugar mixture. If you have some left over, mix it with the other ingredients. Spoon the apple etc equally into the squash halves. Put the squash halves back into the oven and cook for another 30 minutes or until the apples are brown and bubbly.
